Inexpensive Gifts for Teachers

Friendship Soup Mix is a gift idea that I originally saw in Taste of Home magazine many years ago. You can layer these ingredients in a jar as shown, or in a regular quart size mason jar. The recipient can make the soup anytime using a few extra ingredients.

A friend and I sold these at the Farmer’s Market a few years ago for $7 each and made some great spending money.

Of course, you can always make the soup for your family anytime!

MIX: 1/2 Cup Split PeasFriendship Soup
1/3 Cup Beef Bullion
1/4 Cup Pearl Barley
1/2 Cup Lentils
1/4 Cup Dry Minced Onion
2 Tsp. Italian Seasoning
1/2 Cup Long Grain Rice
1/2 Cup Macaroni (Egg Noodles are the best)

ADDITIONAL INGREDIENTS: (put on the gift tag)
1 lb. Ground Beef
3 Qts Water

1 (28 oz.) can Diced Tomatoes

Carefully remove macaroni from jar and set aside. In a large saucepan, brown the beef; drain. Add water, tomatoes, and soup mix. Bring to a boil, reduce heat, cover and simmer 45 minutes. Add reserved macaroni. Cover and simmer 15-20 minutes, until macaroni is tender.

The text in Green (above) should be written on a tag and tied or glued onto the jar. You can also make a nice fabric topper for the jar by cutting a square with pinking sheers. Then tie it around the top with ribbon or raffia.

This makes a nice Winter Warm-Up Gift Basket with a loaf of Easy Sourdough Bread (coming next week!) and some spiced cider mix.
